Joe's parents came into town on Wednesday, March 9, 2011. Thursday I had planned to make a really yummy dinner. Homemade Mac N Cheese and pulled pork sandwiches with cornbread and apple slices with my famous apple dip! I had to go to work for a couple hours and then I came home and got to cookin! Joe's Aunt Joan came in from Sandy Valley for dinner which was so nice! Joe's mom LOVED the apple dip. We put everything away and sent Aunt Joan home with some tasty dinner to take home to Uncle Blaine. The next day we were about to leave for San Diego and Joe's mom and I decided to take some apples for our trip and the dip in a little cooler. So we packed it all up and headed out. I already wrote about our little detour to the doctor's office! That was fun! On the way I got to help Joe's mom with her crocheting! It was a good bonding experience! When we were about half way to San Diego when we decided to have some apples. I went to get the dip out when I realized... it was the pulled pork. BUMMER!!! But we were all hungry and ready for lunch so we stopped and bought a loaf of bread. It was way cheaper than anything else we could've had for lunch and let me tell you, it was waayyyy better!!! We got to San Diego and checked into our hotel. It was a nice one! We even had a refrigerator to put our food in and re freeze our ice packs. Then we met Joe's sister Dayna. We drove to the edge of town and went to the Mormon Battalion! It was so fun to see that part of the history of the church. My favorite story was about this little 8 yr old boy that wanted to be with his dad and he walked 400 miles by himself before he finally met up with his dad. They had to send a guy on a horse to tell his mother that he was there! After the Mormon Battalion we walked a couple blocks to this little Mexican restaurant. It was pretty yummy! The kids had fun and there was this guy that came around and sang to the little ones. Saturday, little Hyrum got baptized. It was a wonderful event. We had a family dinner where I made the apple dip again! It was a huge hit! Everyone wanted the recipe! Then Sunday we went to Sacrament meeting and then headed home. Joe's parents dropped us off and then went all the way back to Idaho!!! I don't know how they did it! We were so glad we all returned home safely! It was a really fun trip! Thanks to Joe's parents for letting us hitch a ride with them!!!
Oh, PS. My favorite thing from the trip was when we were going to the hotel to get ready for the baptism we were about to drive off when I saw little Amelia run out of the house with big huge tears streaming down her face. I jumped out of the car and scooped her up and asked what was wrong. She said," I fordot to dib you a tiss." Right as she said that she gave me a kiss and then immediately quit crying and started laughing and smiling again! It warmed my heart so!!! Joe and I just LOVE her sweet little personality!
Apple Dip:
1 (8 oz) pkg. of cream cheese
1/2 cup sugar
1/4 cup brown sugar
1 tsp. vanilla
1/2 pkg of heath bits (found in the baking isle)
