Happy Birthday Joe!!!







I have been experimenting with baking lately. I've made a lot of cupcakes for a lot of events and have been trying the perfect (from scratch) cake recipe. I tried this one more to be funny. It was a potato cake. Made with mashed potaoes! It was very delisious! And the cake was so easy to cut and didn't fall apart. I tried to get it out of the pan that I cooked it in but it started coming apart. I think I didn't let it cool enough. So I had to leave it in this dish which is why it looks so unprofessional! The cake was so fun to make for him and he was so excited when he got home and saw it! I think I did a good job!!!

Joe has told me many times that his favorite Disney movie growing up was the Lion King. So for his birthday I surprised him with a trip to the strip to see The Lion King.  First we went to dinner at Pin Kaow (our favorite Thai resturaunt) with our good friends the Strattons.  We loved having our friends there to help us celebrate his birthday!  At the show we didn't get the best seats ever, which if I were to go again, I'd pay more for closer seats.  They do a lot of things out in the audience.  It was so awesome either way.  We had an awesome time!  I think this will be a birthday that Joe will remember for a very long time!
